Instructions

  1. Start by preparing your ingredients. Use a microplane to grate the lime zest and garlic cloves, and a citrus juicer for the lime juice. Trim as much fat off the boneless, skinless chicken thighs as possible using kitchen shears.
  2. In a large bowl with a lid, combine all the marinade ingredients: lime zest, lime juice, grated garlic, chili powder, ground cumin, granulated garlic, granulated onion, dried oregano, kosher salt, ground black pepper, water, and non-fat Greek yogurt. Mix well to ensure everything is evenly combined. Marinade should taste quite salty. Add the trimmed chicken thighs to the marinade, making sure they are fully coated. Cover the bowl and refrigerate to marinate for at least 4 hours, or up to 8 hours, for maximum flavor.

  3. Grilling: Preheat your grill to medium-high heat. Grill the marinated chicken thighs for 6-7 minutes per side, or until the internal temperature reaches a minimum of 165°F on an instant-read thermometer.
  4. Traeger: Preheat your Traeger grill to 400°F. Place the chicken thighs on the grill and cook for 30-35 minutes, or until the internal temperature reaches at least 165°F.
  5. Stovetop: Heat a cast iron or non-stick pan over medium-high heat. Cook the chicken thighs in batches for 6-7 minutes per side, or until they reach an internal temperature of 165°F.

  6. Oven: Preheat your oven to 425°F. Spray two baking sheets with cooking spray and arrange the chicken thighs in a single layer. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F.
