Instructions

Roasted Potatoes

  1. Preheat your oven to 425°F (220°C).

  2. Dice the Yukon Gold potatoes into bite-sized pieces and place them on sheet pan lined with parchment paper.

  3. Drizzle with 1 tablespoon of olive oil and sprinkle generously with Jonny's seasoning. Toss the potatoes until they are evenly coated. Arrange the potatoes in a single layer.

  4. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the potatoes are golden brown and crispy.

Sautéed Veggie Mix

  1. While potatoes are in the oven, cut up vegetables and garlic. Set aside garlic for later on in cooking. 

  2. Add all vegetables to a skillet preheated on medium high. Make sure not to add garlic at this point. Season vegetables with salt. 

  3. sauté over medium-high heat for 8 minutes until vegetables start to soften. 

  4. Add Garlic and stir. Cook for 3-5 more minutes until the vegetables are cooked and the garlic is tender.

Cook Eggs, Sausage, and Assemble Bowl

  1. Heat one serving of pre-cooked breakfast sausage in the microwave or saute pan.

  2. Assemble 1/4 of potatoes and veggies into a bowl. Top with two cooked eggs (scrambled, fried, or poached) and sausage.

  3. Enjoy!

*Meal prep these bowls by roasting the potatoes and veggies in advance. When ready to eat, cook the eggs fresh for the best flavor
