  1. Start by blending the low-fat cottage cheese, non-fat plain Greek yogurt, canned pumpkin puree, pumpkin pie spice, ground black pepper, monk fruit sweetener, and sugar-free pudding mix in a blender until the mixture is smooth and creamy.
  2. Once blended, transfer the pudding into a serving dish. Cover it tightly with plastic wrap, ensuring the wrap touches the surface of the pudding to prevent browning.
  3. Refrigerate the mixture for at least 30 minutes to allow the flavors to meld and the pudding to set properly.
