Instructions

  1. Preheat Blackstone or cast iron pan (if cooking indoors) on medium-high heat and set oven to warm or 170F.
  2. While cooking surface is preheating, form gound beef into six 2.5-2.6 oz balls and set aside.
  3. When cooking surface is preheated. Sprinkle seasoning salt generously over surface. This will season first side of burger. Next, place formed ground beef on cooking surface and smash down as flat as you can using a burger press or large spatula.
  4. Cook for 2-3 minutes on first side.
  5. Before flipping the burgers, sprinkle the top side with seasoning salt and squeez on yellow mustard.
  6. Flip the burger patties using metal spatula, trying to scrape up any crust that has formed on first side. Flip and smash patties again while second side begins to cook. 
  7. Top 3 of the patties with one slice of American cheese. This leaves three patties with cheese and three patties without cheese.
  8. Cook on second side for 2-3 minutes. 
  9. When burgers are done, place cooked burger patties in an oven set to warm or 170F while you toast the buns.
  10. Turn heat down to medium-low and toast buns in whatever drippings are left over from cooking the burger patties. About 2 minutes.
  11. Stack the patties: Pair each cheese-topped patty with a plain patty, ensuring each burger has one of each. Stack two patties on each toasted bun. Top with my EHK’s Secret Sauce and Carmelized Onion Jam. Enjoy!
