Slice the zucchini into 1/4 inch thick half moons and place them on the prepared baking sheet.

Spray the zucchini with 4g of avocado oil spray and sprinkle with 1/2 teaspoon of kosher salt and 1/2 teaspoon of ground black pepper. Toss to evenly distribute the oil and seasonings.

Spread the zucchini in a single layer, making sure not to overlap the pieces.

Roast in the oven for 12-15 minutes, or until the zucchini starts to brown around the edges.
