Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
  2. Slice the zucchini into 1/4 inch thick half moons and place them on the prepared baking sheet.
  3. Spray the zucchini with 4g of avocado oil spray and sprinkle with 1/2 teaspoon of kosher salt and 1/2 teaspoon of ground black pepper. Toss to evenly distribute the oil and seasonings.
  4. Spread the zucchini in a single layer, making sure not to overlap the pieces.
  5. Roast in the oven for 12-15 minutes, or until the zucchini starts to brown around the edges.
  6. Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese evenly over the zucchini. Return to the oven and roast for an additional 5-8 minutes, or until the Parmesan is melted and golden brown.
  7. Serve hot and enjoy!
