Cook Rice

Rinse 1/2 cup of white rice under cold water until clear. In a small sauce pot with a lid, combine the rice with 1 cup of water and bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer for 15-18 minutes. Remove from heat, let sit covered for 5 minutes, then fluff with a fork. This will yield about 1.5 cups of cooked rice.

Place 3 cups of riced cauliflower in a microwave-safe bowl. Microwave on high for 4-5 minutes, or until fully defrosted. Stir halfway through to ensure even defrosting.

mix the defrosted riced cauliflower with 1.5 cups of cooked white rice.

Add 1/2 teaspoon of kosher salt and stir well to evenly distribute the seasoning.
