Instructions

  1. In a large pot or Dutch oven, heat over medium-high heat. Add the ground beef and ground turkey, breaking up the meat as it cooks. Season with 2 teaspoons of kosher salt, and cook until browned and fully cooked through, about 6-8 minutes.
  2. Once the meat is browned, add the diced onion, bell pepper, celery, and carrots to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Add the minced garlic, chili powder, ground cumin, granulated onion, granulated garlic, black pepper, and tomato paste to the pot. Stir well and cook for another 1-2 minutes until fragrant.
  4. Pour in the beef broth, Rotel tomatoes, ranch-style beans, and dry lentils. Rinse the cans with 1/2 to 1 cup of water, and add the rinsed water to the soup. Stir to combine.
  5. Bring the soup to a boil, then add the diced potatoes. Reduce the heat to low, cover, and cook for 15 minutes, or until the potatoes and lentils are tender.
  6. Taste and adjust seasoning, adding the remaining 1 teaspoon of kosher salt if needed.
