Turn on your Instant Pot and select the "Sauté" function. Once the pot is hot, add the seasoned pork tenderloin and sear it on all sides until it develops a golden-brown crust, approximately 3-4 minutes per side. After searing, remove the pork from the pot and set it aside.

Add the sliced ½ onion and the peeled, matchstick-cut apple to the Instant Pot. Sauté them for about 2 minutes until they begin to soften and release their flavors.

Pour in the 2/3 cup of apple juice, ½ cup of water, and 3 tablespoons of apple cider vinegar. Stir the liquids to combine with the onions and apples.

Return the seared pork tenderloin to the pot on top of onion and apples. Secure the lid on the Instant Pot, ensuring the valve is set to the "Sealing" position. Select the "Pressure Cook" or "Manual" function and set the timer for 45 minutes on high pressure.
