Instant Pot Directions

  1. Start by generously seasoning the 2.5 lb pork tenderloin with BBQ rub, ensuring it’s evenly coated on all sides.

  2. Turn on your Instant Pot and select the "Sauté" function. Once the pot is hot, add the seasoned pork tenderloin and sear it on all sides until it develops a golden-brown crust, approximately 3-4 minutes per side. After searing, remove the pork from the pot and set it aside.
  3. Add the sliced ½ onion and the peeled, matchstick-cut apple to the Instant Pot. Sauté them for about 2 minutes until they begin to soften and release their flavors.
  4. Pour in the 2/3 cup of apple juice, ½ cup of water, and 3 tablespoons of apple cider vinegar. Stir the liquids to combine with the onions and apples.
  5. Return the seared pork tenderloin to the pot on top of onion and apples. Secure the lid on the Instant Pot, ensuring the valve is set to the "Sealing" position. Select the "Pressure Cook" or "Manual" function and set the timer for 45 minutes on high pressure.

  6. Once the cooking time is complete, allow the pressure to release naturally for 20 minutes. After the natural release, carefully perform a quick release to vent any remaining pressure. 

  7. Open the Instant Pot and check the liquid level. If there is more than 1/2 cup of cooking liquid, discard the excess. 
  8. Using two forks, shred the pork tenderloin directly in the pot until it reaches your desired consistency. It may be helpful to cut tenderloin into 2-3 inch sections to shred. 

  9. Stir in the 1 cup of Sweet Baby Ray's No Sugar Added BBQ Sauce, ensuring the pulled pork is thoroughly coated and flavorful. If desired, add more BBQ sauce on top before serving.

  10. Serve on your choice of bun or turn into pulled pork pizza or quesadilla!
