Preheat your oven to 400°F (200°C).

In a large skillet over medium-high heat, brown lean ground beef, breaking it up with a spatula as it cooks.

Once the beef is browned, about 5-7 minutes, add the minced garlic, EHK Taco Seasoning and kosher salt. Stir well and cook for another 2-3 minutes until the garlic and seasonings are fragrant.

Add the corn and black beans to the skillet, mixing everything together. Cook for another 3-5 minutes, allowing the flavors to meld.

Place the tortillas on a baking sheet in a single layer, making sure they don’t overlap and spray with avocado oil

Turn tortillas over so the oiled side is down.

Spoon the beef mixture onto one half of each tortilla. Fold the tortilla in half over the filling, pressing down gently to secure it. Each tortilla should get roughly 2.3oz of beef filling.

Place the baking sheet in the preheated oven and bake the tacos for 10-12 minutes, flipping halfway through. The tacos are done when the tortillas are crispy and golden brown.
