Instructions

  1. Start by cutting the apples into small, even pieces. In a skillet over medium heat, cook the apples until they are almost cooked but retain some texture, about 7-10 minutes. Remove from heat and set aside to cool slightly.

  2. Preheat your oven to 400°F (200°C). Lightly grease a muffin tin with a small amount of the melted butter to prevent sticking.
  3. In a large mixing bowl, combine the self-rising flour, monkfruit sweetener, and baking soda. Stir to evenly distribute the dry ingredients.
  4. Add the non-fat Greek yogurt to the dry mixture. Mix until a dough forms. The dough should be slightly sticky but workable.
  5. Portion out the dough into balls weighing 50-52g each. Flatten each ball into a disk using your fingers and a floured work surface to prevent sticking. Place each disk into the greased muffin tin, pressing down to flatten the bottom and sides so they are quite thin. Leave any excess dough at the top to fold over later.
  6. Brush the inside of each dough-lined muffin cup with a portion of the melted butter, ensuring to save enough butter for brushing the tops before baking.
  7. Place about 2 tablespoons (45g) of the cooked apples into each dough-lined cup. Fold the excess dough over the filling to create a lattice-inspired top.
  8. Brush the tops with the remaining melted butter to achieve a golden brown color while baking.
  9. Sprinkle the turbinado sugar evenly over the tops for a touch of sweetness and a slight crunch.
  10. Bake in the preheated oven at 400°F (200°C) for 15-17 minutes, or until the croissants are golden brown and puffed up.
  11. Remove from the oven and let them cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely. Enjoy your delicious, healthier apple croissants with a beautiful lattice-inspired top!
