  1. Start by preparing your ingredients. If you haven’t already made the Ultimate Chipotle Chicken Thighs, follow the recipe linked below to cook the chicken thighs. You'll need 12 ounces of cooked chicken, cut into bite-sized pieces, for the burritos.
  2. Season the canned black beans with granulated garlic and fresh lime juice. Measure out 2 ounces of beans, or about 1/4 cup, for each burrito.
  3. In a bowl, whisk the eggs with cottage cheese and kosher salt until fully combined. Cook the scrambled egg mixture in a nonstick pan over medium heat until fully set.
  4. Lay out the tortillas on a flat surface. Divide the seasoned black beans, scrambled eggs, and cottage cheese mixture evenly among the four tortillas. Top each with 3 ounces of cooked, diced chicken thighs and 1 tablespoon of sliced Greek peperoncini’s. Add any veggies you have on hand for extra flavor and nutrients.
  5. Roll each tortilla tightly into a burrito. Heat a nonstick pan over medium heat and grill each burrito on both sides until golden brown and crispy, about 2-3 minutes per side.
