Instructions

  1. Peel and thinly slice the onions.
  2. In a large skillet, heat 2 teaspoons of avocado oil over medium-low heat.
  3. Add the sliced onions to the skillet and sprinkle with 1 1⁄2 teaspoons of kosher salt.
  4. Stir to coat the onions in oil and salt.
  5. Add thyme sprig to onions.
  6. Cook the onions, stirring occasionally, for about 45-50 minutes. The onions should turn a deep golden brown color. Be patient, as this process takes time. If the onions start to stick, add a splash of water to deglaze the pan.
  7. When the onions are dark and carmelized, they are done. Remove the thyme sprig and transfer the caramelized onion jam to a bowl. Let it cool to room temperature.
  8. Store in an airtight container in the refrigerator for up to a week.
  9. Enjoy your delicious caramelized onion jam on pizzas, burgers, or any dish that needs a burst of savory sweetness!
