Description

My Air Fryer Potato Wedges are the perfect side dish, featuring a surprising crust that gets them extra crispy without the need for breading or added carbs. These wedges are super easy to make and come in at just around 150 calories per serving, making them a tasty and satisfying addition to any meal! Oven directions below!

Instructions

  1. Cut 1 pound of Yukon Gold potatoes into 1/2-inch thick wedges and place in a large mixing bowl.
  2. In a microwave-safe bowl, mix 2 tablespoons of cornstarch with 1/2 cup of water to create a slurry. Microwave the mixture for 1-2 minutes, stopping every 20 seconds to stir. The mixture should thicken into a paste.
  3. Add cornstarch paste to mixing bowl and coat the potato wedges with the cornstarch paste. It’s okay if the coating looks a bit chunky; this will help create a crispy texture.
  4. Air Fryer: Place the coated potato wedges in a single layer in the air fryer basket. Depending on how many batches you will need to cook, spray the wedges with 2-4 sprays of avocado oil. Cook the wedges in batches at 375°F for 15 minutes, shaking the basket a few times during cooking to ensure even crisping.

    Oven: Arrange in single layer on parchment-lined baking sheet. Spray with 4 sprays avocado oil. Bake 425F for 30 minutes, flipping halfway through. Salt immediately.
